    Italian Herb Roasted Lamb

    List of Ingredients


    • 1 cup zesty Italian dressing
    • 1/2 cup dry red wine
    • 3 cloves garlic, minced
    • 1 T dried rosemary leaves
    • 2 tsp dried thyme leaves
    • 1 tsp salt
    • 1 tsp pepper
    • 1 butterflied leg of lamb (about 3 lbs)


    Instructions


    1. Mix dressing, wine, garlic, herbs and seasonings. Pour over lamb in large zipper-style storage bag; seal bag. Marinate in refrigerator 2 hours or overnight; turning occasionally.
    2. Place lamb on rack in roasting pan.
    3. Bake at 350 degrees for 50 to 60 minutes or until meat thermometer reaches 160 degrees. Let stand 10 minutes before slicing. Garnish with fresh rosemary.
