Italian Pot Roast with Red Wine Sauce

- 1 lb medium red potatoes (about 4), unpeeled and cut in 1" pieces
- 1/2 lb baby carrots
- 1 large onion, thickly sliced and separated into ringes, divided
- 2 1/2 lbs lean boneless beef chuck roast, well-trimmed and cut into 6 pieces
- 2 pkgs McCormick brown gravy mix
- 1 1/2 T flour
- 2 1/2 tsp Italian seasoning
- 1 tsp celery salt
- 1/2 cup water
- 1/2 cup dry red wine
- 1 T dried parsley flakes
Instructions
- Place potatoes, carrots, half of the onion slices and beef in order listed in a 3 1/2 or 4 quart crockpot.
- Combine gravy mixes, flour, Italian seasoning, and celery salt in small bowl. Sprinkle half over beef. Turn beef over and sprinkle with remaining seasoning mixture.
- Top beef with remaining onion slcies. Combine water and wine and pour over all. Cover and cook on low for 8 hours or until beef is doen and vegetables are tender. Add parsley flakes; stir well.
- Remove beef and vegetables to serving platter. Spoon some sauce over beef and vegetables. Serve remaining sauce on side, if desired.
