Lamb Shanks

- 4 lamb shanks, cut in half
- vegetable oil
- salt and pepper
- 8 cloves garlic, peeled and whole
- 3 c. liquid, suggest 2 cups dry red wine and 1 cup of chicken stock
Instructions
- Preheat oven to 325°.
- In a large oven proof pan with a tight fitting lid, heat oil over medium heat and brown shanks, turning on all sides to brown. Do this in batches so shanks will brown and not steam.
- Add garlic cloves and liquid stirring up any brown bits. Return shanks to pan along with any juices. Bring to a simmer.
- Cover and put in preheated oven for 2 – 2 1/2 hours until tender, turning and basting shanks a couple of times during cooking. Serve with rice.

MAKE AHEAD: Shanks may be prepared a day ahead or frozen. Refrigerate to cool and separate fat. Remove fat then freeze or reheat.
