    List of Ingredients


    • 4 lamb shanks, cut in half
    • vegetable oil
    • salt and pepper
    • 8 cloves garlic, peeled and whole
    • 3 c. liquid, suggest 2 cups dry red wine and 1 cup of chicken stock


    Instructions


    1. Preheat oven to 325°.
    2. In a large oven proof pan with a tight fitting lid, heat oil over medium heat and brown shanks, turning on all sides to brown. Do this in batches so shanks will brown and not steam.
    3. Add garlic cloves and liquid stirring up any brown bits. Return shanks to pan along with any juices. Bring to a simmer.
    4. Cover and put in preheated oven for 2 – 2 1/2 hours until tender, turning and basting shanks a couple of times during cooking. Serve with rice.

    Serves 4

    MAKE AHEAD: Shanks may be prepared a day ahead or frozen. Refrigerate to cool and separate fat. Remove fat then freeze or reheat.
