Roast Beef Rolls
List of Ingredients
- 3 cups warm prepared mashed potatoes
- 2 cans (15 oz each) mixed vegetables, drained
- 12 thick slices deli roast beef (about 2 lbs total)
- 1 jar (18 oz) brown gravy
Instructions
- Preheat oven to 375 degrees. In a large bowl, combine the mashed potatoes and vegetables.
- Place 1/3 c of the potato mixture at the narrow end of each slice of roast beef and roll up. Place the beef rolls seam side down in a lage shallow roasting pan, making two rows of six.
- Pour the gravy over the beef rolls, cover tightly with aluminum foil, and bake for 45 to 50 minutes, or until the rolls are heated through and the gravy is bubbly.
