- 1 T dried rosemary leaves, slightly crushed
- 1 T dried thyme leaves
- 1 tsp dried basil leaves
- 1 1/2 tsp coarse salt
- 1 tsp garlic powder
- 1 tsp ground black pepper
- 1 tsp ground cumin
- 1 cup finely chopped onion
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup dry red wine
- 3 T olive oil, divided
- 8 large lamb chops, about 1" thick and trimmed

- Place the lamb chops in a shallow pan and pour rosemary mojo over to cover. Marinate at least one hour or up to four hours. Remove lamb from mojo and pat dry; discard mojo.
- Heat remaining oil in a heavy skillet over medium high heat. Place lamb carefully in skillet. Sear one side of lamb approximately 4 minutes or until well browned. Turn chops over and continue to cook 4 more minutes or until desired doneness. Remove lamb to a serving plate and keep warm. Add reserved mojo and simmer 4 minutes to reduce. Serve mojo over lamb.
