Savory Braised Short Ribs

- 4 lbs short ribs
- 2 cups beef broth
- 1 cup onion, chopped
- 1 cup water
- 4 peppercorns
- 2 tsp worcestershire sauce
- 1 garlic cloves, crushed
- 1 bay leaf
- 1/2 tsp marjarom
- 1/4 cup sour cream
- 2 1/2 T horseradish
- 1 T prepared mustard
- 1/8 tsp salt
- 3 T water
- 1/2 cup water
Instructions
- Trim any excess from shortribs. In a kettle over medium heat, brown meat on all sides, about 30 minutes. Pour off the drippings.
- Add beef broth, chopped onion, water, peppercorns, worcestershire sauce, crushed garlic clove, bay leaf and marjarom. Bring to a boil; reduce the heat, cover, and cook slowly 2 to 2 1/2 hours or until tender.
- Meanwhile, in a small bowl combine sour cream, horseradish, prepared mustard and salt. Set aside.
- Place the ribs on a serving platter and keep warm. Skim the fat off the cooking liquid. Combine flour with water, mixing until smooth then combine with the cooking liquid. Bring to a boil, stirring constantly, reduce heat, and cook slowly for 3 minutes. Serve both sauces with the ribs.
