Bow-Tie Pasta With Broccolini

Serve with chicken with pesto (see poultry).
List of Ingredients
- 12 oz bow-tie pasta
- 1 bunch (8 oz) broccolini
- 1 T olive oil
- 3/4 cup shredded Parmesan cheese
- 1 roasted red pepper (from a jar)
- 1/4 tsp each salt and pepper
Instructions
- Cook pasta in lightly salted boiling water as package directs.
- Meanwhile cut broccolini crosswise in thirds. Add to pasta 3 minutes before pasta is done. Drain, resrving 1/4 cup cooking water; return pasta and broccolini to pot.
- Add olive oil, parmesan cheese, red pepper, slat and pepper and reserved cooking water; toss to mix.
Final Comments
Serves 4.
FYI: Broccolini, a cross between broccoli and Chinese kale, has a delicious sweet taste and crisp bite. Three cups broccoli florets can be substituted.
