Broccoli Rabe with Bow Ties

- 1 pound bow tie pasta
- 1 tablespoon butter
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 pound broccoli rabe -- cut into 2" pieces
- 1/3 cup dry white wine
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup grated Parmesan cheese
Instructions
- In a large saucepan filled with lightly salted boiling water, cook bow ties until tender but still firm, 8 to 10 minutes. Drain. Transfer to a serving bowl and toss with butter.
- Meanwhile, in a large frying pan, heat oil and cook garlic slices over medium heat until just golden, 2 minutes; do not burn, or sauce will be bitter.
- Add broccoli rabe and cook, stirring often, until wilted, 2 to 3 minutes. Add wine and cook, stirring, until liquid evaporates, 1 to 2 minutes. Add cream and season with salt and pepper. Cook until heated through, 2 to 3 minutes.
- In a large bowl, toss the sauce with cooked bow ties and Parmesan cheese. Serve hot.
