CAPELLINI WITH LEMON AND GARLIC

Recipe Introduction
This is quick and easy, as well as healthy and very good. I prefer it as a side dish, but you could use it as the main dish.
List of Ingredients
- 1 pound capellini or other thin spaghetti
- 1/2 cup olive oil
- 3-4 tablespoons minced garlic
- Salt and pepper to taste
- Juice and half of the zest of 1 lemon
- 2 tablespoons chopped fresh parsley
- Freshly grated Parmesan cheese
Instructions
- Cook the pasta according to package directions for al dente. Drain.
- Add the oil and garlic to pot and sauté about 1 minute.
- Return the pasta to the pot and toss. Add salt, pepper, lemon juice, zest and parsley. Toss again. Serve, passing the cheese separately.
Final Comments
SERVES 4 (6 to 8 as a side dish)
Note: If using as a side dish, this pasta can be made up to an hour ahead, set aside at room temperature, and reheated in microwave.
