Linguine with Broccoli

- 2 1/2 tsps salt
- 1 large brunch broccoli (1 3/4 lbs), cut into small florets
- 1 pkg (16 oz) linguine or spaghetti
- 1/4 cup olive oil
- 1 large garlic clove, finely chopped
- 1/8 tsp crushed red pepper (optional)
- 3/4 tsp coarsely ground black pepper
- 2 T chopped fresh parsley
Instructions
- In 6 quart saucepot, heat 4 quarts water to boiling over heat. Add 2 tsps salt and broccoli; heat to boiling. Cook until broccoli is tender, 4 to 6 minutes. With slotted spoon, transfer broccoli to colander; rinse with cold running water. Heat water in saucepot to boiling; add pasta and cook as label directs. Drain and return pasta to saucepot. Keep warm.
- Meanwhile, in 10" skillet, heat oil over medium heat; add garlic and cook just until golden, about 1 minute. Add crushed red pepper, if using, and cook 30 seconds longer. Remove from heat and stir in remaining 1/2 tsp salt and black pepper. Add broccoli; cook, stirring, until broccoli is coated with oil, 2 to 3 minutes.
- Add broccoli mixture and parsley to pasta in pot; toss to combine.
