List of Ingredients
- 2 tablespoons fresh basil leaves
- 1 tablespoon fresh parsley
- 1 (26 1/2-ounce) box Pomi tomatoes (drained)
- 1 tablespoon olive oil
- 4 cloves fresh garlic
- 1 tablespoon capers (drained)
- salt and pepper, to taste
- 8 ounces penne rigate pasta (1/2 box)
- 2 tablespoons butter
- 2 tablespoons shredded Parmesan cheese (optional)
Instructions
- Fill large saucepan 1/2 full of water. Cover and bring to a boil on high heat for pasta. Chop (rinsed) basil and parsley; then measure.
- Preheat large saut� pan on medium 2�3 minutes. Place oil in pan and swirl to coat. Crush cloves into pan, using garlic press. Use knife to remove garlic from bottom of press.
- Add capers, tomatoes, salt and pepper. Reduce heat to low and saut�, stirring often, 8�10 minutes.
- Stir pasta into boiling water. Boil 8�10 minutes, stirring occasionally, until tender.
- Add herbs and butter to tomatoes. Saut�, stirring occasionally, 2 minutes. Drain pasta and add to tomatoes. Stir in cheese and serve.
