Penne with Broccoli, Bacon and Garlic

List of Ingredients
- 1 box (1 lb) penne
- 1 head broccoli, cut into 1" flowerets, stems peeled and cut into 3/4" thick slices OR: 1 bag (about 1 lb) fresh broccoli flowerets
- 2 T olive oil
- 1/2 lb Canadian bacon, diced or pancetta
- 1 medium-size onion, halved and sliced crosswise
- 1/2 tsp red-pepper flakes
- 1 can (14.5 oz) chicken broth
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 medium-size ripe red tomato, cored and diced
- 1/3 cup grated Parmesan cheese
Instructions
- In large deep pot of ightly salted water, cook penne until al dente, firm yet tender, following package directions. For last 4 minutes of cooking, add broccoli. Drain.
- Meanwhile, in large nonstick skillet, heat oil over medium-high heat. Add bacon and onion; saute 3 minutes. Lower heat to medium; add pepper flakes; cook until onion is softened, about 4 minutes. Stir in broth, salt and pepper; heat through. Remove from heat; stir in tomato.
- Transfer hot pasta and broccoli to large serving bowl. Add bacon mixture from skillet; toss to combine. Stir in Parmesan, and serve immediately.
