Ricotta and Basil over Penne Marinara

- 1 lb penne pasta
- 2 T olive oil
- pinch of red pepper flakes
- 1/2 medium clove garlic, minced
- 2 cups marinara or other pasta sauce
- 1/4 cup vegetable broth
- salt and freshly ground black pepper, to taste
- 16 oz container low-fat ricotta cheese
- 1 T Italian parsley, chopped
- 4 to 5 fresh basil leaves, cut into slivers
Instructions
- Bring a medium saucepan of water to boil over high heat. Add the pasta and cook until tender, about 8 minutes. Drain and set aside.
- While pasta cooks, combine olive oil and red pepper flakes in a skillet over medium heat. Heat for 30 seconds. Add garlic and saute another 30 seconds, or until it just begins to brown.
- Add marinara sauce and broth and cook for 2 minutes, or until sauce begins to boil. Remove from heat and season with salt and pepper.
- To serve, toss the pasta in a large bowl with about half of the sauce. Divide the pasta among individual serving plates and top with additional sauce, ricotta cheese, parsley and basil.
