Spaghetti with Artichoke and Mushroom Sa

- 1-1lb. package of spaghetti cooked according to the package directions
- 3 tbsp. butter
- 3 tbsp. olive oil
- 2 tbsp chopped herbs (basil, dill, cilantro)
- 12 oz. artichoke hearts, drained and cut into fourths
- 1/2 cup yellow onion, diced fine
- 8 oz. white mushrooms, washed and drained
- 1 lemon
- 3/4 cup white wine, chablis
- 1 cup romano cheese, grated
- salt and black pepper
Instructions
- Heat the olive oil and the butter over medium heat.
- Add the onions, chopped herbs, and the quartered artichokes, cook for 2 minutes. Now add the mushrooms, squeeze the lemon in the skillet, add the wine and the chicken stock. Bring this mixture to a simmer. Toss in the cheese and season to taste with salt and add the cooked spaghetti and blend together. Serve immediately.
