    Ravioli - everyone loves them, but no one wants to make them at home. This is an incredibly easy and quick alternative to the pasta variety. You will impress and amaze your family and guests. Have fun - kids will love helping to fill them too!


    List of Ingredients


    • 1 acorn or winter squash
    • 1/3 c. pecan halves
    • 1/4 c. bread crumbs (I like the Italian style)
    • 1/2 c. crumbled Kasseri or Cougar Gold Cheese
    • 1 pkg wonton wrappers
    • 1/4 c. (1/2 stick) butter, cut into small pieces


    Instructions


    1. Cut squash in half and clean. Turn upside down in a shallow pan, add a 1/4-inch of water and bake at 350 for 40 minutes or until soft.
    2. In a food processor place pecans and flash chop until fine. Add the breadcrumbs, 1/4 c. cheese and 1 1/2 c. squash blend.
    3. Place a dollop (technical term!) of the squash mixture in the center of a wonton wrapper, dampen two edges of the wrapper and fold over pressing together to seal. Place the ravioli into boiling water for 3-5 minutes until cooked al dente.
    4. Toss in butter and remaining cheese until butter is melted. Garnish with parsley and serve immediately. An alternative sauce for these ravioli is an alfredo - homemade or store bought.
