Tomato Sauce w/ Ricotta & Herbs

List of Ingredients
- 8 cups chopped onions
- 2 T minced garlic
- 6 T olive oil
- 9 qts tomatoes, peeled, seeded and diced
- 6 T chopped fresh marjoram
- 4 tsp chopped fresh rosemary
- 1 T salt
- 1 T sugar
- 2 tsp black pepper
- 3 lbs cooked fettuccine
- 1 1/2 cups ricotta cheese
Instructions
- Saute onions and garlic in oil in a large skillet over medium high heat until softened.
- Stir in remaining ingredients except ricotta and fettuccine. Cook over medium high heat stirring frequently for 10-15 minutes, or until sauce thickens.
- Top each serving with 1 oz (1 T) ricotta cheese.
