Hamburger Pie with Cheese Crust
This hearty meal-in-a-dish is similar to the familiar hamburger pie, except this recipe has a lattice crust instead of a mashed potato topper.

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/8 tsp salt
- 1/4 cup shredded American cheese
- 2 T shortening
- 1/3 cup milk
- 1 lb ground beef
- 1 cup chopped onion
- 3/4 cup chopped celery
- 1/3 cup chopped green pepper
- 1 clove garlic, minced
- 1 T chili powder
- 1 T snipped fresh basil or 1 tsp dried basil, crushed
- 1/8 tsp pepper
- 1 10-3/4 oz can condensed tomato soup or tomato sauce
- 1 cup loose-pack frozen cut green beans
- 1 egg yolk
- 2 T milk
Instructions
- For cheese crust, in a mixing bowl stir together flour, baking powder, and salt. Cut in cheese and shortening. Add the 1/3 cup milk; mix well. Form dough into a ball. On a lightly floured surface roll dough into a 9" square about 1/4" thick. Using a fluted pastry wheel or knife, cut crust into eighteen 1/2" wide strips.
- In a large skillet cook ground beef, onion, celery, green pepper, and garlic till beef is brown and vegetables are tender. Drain well. Stir in chili powder, basil, and pepper; cook for 1 minute. Add soup and green beans; bring to just boiling. Transfer to an 8" x 1 1/2" round baking dish.
- Weave crust strips atop ground beef mixture, forming a lattice crust. Trim strips at the edge of the dish and press strips down slightly. In a small bowl stir together egg yolk and the 2 T milk; brush over lattice crust.
- Bake pie, uncovered, in a 425 degree oven about 15 minutes or till golden.
