    • 1 cup all-purpose flour
    • 7 T butter, softened (no substitutes)
    • 2 T confectioners' sugar
    • 3 large eggs, lightly beaten
    • 1 cup sugar
    • 1/3 cup fresh lemon juice
    • 2 T flour
    • confectioners' sugar


    Instructions


    1. Make crust: Preheat oven to 350 degrees. Combine flour, butter, and confectioners' sugar in a food processor; process until combined. Press evenly into a 9" tart pan with removable bottom, or springform pan. Refrigerate 15 minutes. Bake 15 to 18 minutes, until deep, golden brown. Cool completely on wire rack.
    2. Make filling: Whisk eggs, sugar, lemon juice, and flour in a large bowl until smooth. Pour into prepared crust. Bake 15 to 18 minutes, until filling is set. Transfer to wire rack. Sift additional confectioners' sugar over warm tart, then cool completely.
