    Sprinkling the pizza pan with cornmeal adds extra texture and crispness to the crust.


    List of Ingredients


    • 1 T cornmeal
    • 1 1/2 cups baking mix
    • 1/4 cup plus 2 T boiling water
    • 1/2 lb ground beef
    • 1/3 cup chopped onion
    • 1 tsp chili powder
    • 1/2 tsp dried oregano leaves
    • 1/4 tsp pepper
    • 1 small clove garlic, finely chopped
    • 1 1/2 cups shredded Monterey Jack cheese
    • 1 can (28 oz) whole tomatoes, drained and chopped
    • 1 can (4 oz) chopped green chilies, drained
    • 1 T chopped fresh parsley
    • 1 tsp lemon juice


    Instructions


    1. Preheat oven to 350 degrees. Grease 12" pizza pan; sprinkle with cornmeal. Mix baking mix and water until soft dough forms. Turn onto surface dusted with baking mix; gently roll in baking mix to coat. Knead 10 times. Press dough in pan with hands dusted with baking mix. Bake 10 minutes.
    2. Cook ground beef, onion, chili powder, oregano, pepper and garlic in 10" skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in 3/4 cup of the cheese and the remaining ingredients. Spoon beef mixture onto crust. Sprinkle with remaining 3/4 cup cheese.
    3. Bake about 10 minutes or until crust is golden brown and cheese is bubbly.
