Recipe Introduction
Sprinkling the pizza pan with cornmeal adds extra texture and crispness to the crust.
List of Ingredients
- 1 T cornmeal
- 1 1/2 cups baking mix
- 1/4 cup plus 2 T boiling water
- 1/2 lb ground beef
- 1/3 cup chopped onion
- 1 tsp chili powder
- 1/2 tsp dried oregano leaves
- 1/4 tsp pepper
- 1 small clove garlic, finely chopped
- 1 1/2 cups shredded Monterey Jack cheese
- 1 can (28 oz) whole tomatoes, drained and chopped
- 1 can (4 oz) chopped green chilies, drained
- 1 T chopped fresh parsley
- 1 tsp lemon juice
Instructions
- Preheat oven to 350 degrees. Grease 12" pizza pan; sprinkle with cornmeal. Mix baking mix and water until soft dough forms. Turn onto surface dusted with baking mix; gently roll in baking mix to coat. Knead 10 times. Press dough in pan with hands dusted with baking mix. Bake 10 minutes.
- Cook ground beef, onion, chili powder, oregano, pepper and garlic in 10" skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in 3/4 cup of the cheese and the remaining ingredients. Spoon beef mixture onto crust. Sprinkle with remaining 3/4 cup cheese.
- Bake about 10 minutes or until crust is golden brown and cheese is bubbly.
