Almond Chicken

- 8 boneless, skinless chicken thighs
- 1/4 cup Italian dressing
- 1 cup chicken broth
- 2 cups frozen cut green beans
- 1 cup instant white rice
- 1/4 cup sliced almonds
Instructions
- In a large resealable plastic bag, toss chicken thighs with Italian dressing.
- Pour contents of bag into a large nonstick skillet over medium-high heat and cook chicken 4 minutes on each side, or until browned.
- Stir in chicken broth and bring to a boil; cover and simmer 10 minutes.
- Add green beans and cook 5 minutes more, or until chicken is cooked through.
- Remove chicken (keep warm) and add 1 cup instant rice and almonds to the liquid and beans in the pan. Cover, remove from heat and let stand 5 minutes.
- Serve chicken on top of rice-green bean mixture.
