Barbecued Chicken

- 1/2 cup (1 stick) butter or margarine
- 1/2 cup soy sauce
- 6 tablespoons fresh lemon juice
- 1/4 cup Worcestershire sauce
- 2 teaspoons red-wine vinegar
- 2 cloves garlic, finely chopped
- 1/4 teaspoon pepper
- 2 whole bay leaves
- 2 whole fryers (31/2 pounds each), each cut into 8 pieces
Instructions
- Combine butter, soy sauce, lemon juice, Worcestershire sauce, vinegar, garlic, pepper and bay leaves in small saucepan over medium heat. Simmer marinade 5 minutes. Remove from heat. Discard bay leaves.
- Combine chicken and marinade in shallow dish or sealable plastic bag. Refrigerate 1 hour or overnight.
- Preheat oven to 425°. Grease 1 large roasting pan or 2 smaller ones. Place chicken in pan(s). Reserve the marinade.
- Bake in 425° oven 40 to 45 minutes or until no longer pink near bone; baste with marinade occasionally. Discard any leftover marinade.
- Increase oven temperature to broil. Run chicken under broiler to crisp skin, about 3 minutes. Serve.
