    List of Ingredients


    • 1 cup orange juice
    • 1/2 cup lime juice
    • 1 tablespoon ground cumin
    • 1-1/2 teaspoons salt
    • 1 teaspoon pepper
    • 10 cloves garlic, smashed
    • 2 3-1/2 pound chickens, cut up
    • 1 cup chopped cilantro


    Instructions


    1. In a medium bowl, combine orange juice, lime juice, cumin, salt, and pepper; mix well. Pour into two large plastic bags; drop 5 cloves garlic in each. Add 1 chicken to each bag; seal. Turn bag over several times to mix and coat chicken. Refrigerate at least 3 hours.
    2. Preheat oven to 425°F. Spray a large roasting pan and rack with non-stick vegetable spray.
    3. Arrange chicken on prepared rack.
    4. Bake 35 minutes or until juice run clear when chicken is pierced.
    5. Arrange on a serving platter; sprinkle with cilantro. Garnish with orange wedges, if desired.
