CITRUS CHICKEN WITH CILANTRO

- 1 cup orange juice
- 1/2 cup lime juice
- 1 tablespoon ground cumin
- 1-1/2 teaspoons salt
- 1 teaspoon pepper
- 10 cloves garlic, smashed
- 2 3-1/2 pound chickens, cut up
- 1 cup chopped cilantro
Instructions
- In a medium bowl, combine orange juice, lime juice, cumin, salt, and pepper; mix well. Pour into two large plastic bags; drop 5 cloves garlic in each. Add 1 chicken to each bag; seal. Turn bag over several times to mix and coat chicken. Refrigerate at least 3 hours.
- Preheat oven to 425°F. Spray a large roasting pan and rack with non-stick vegetable spray.
- Arrange chicken on prepared rack.
- Bake 35 minutes or until juice run clear when chicken is pierced.
- Arrange on a serving platter; sprinkle with cilantro. Garnish with orange wedges, if desired.
