Chicken Breasts w/ Garam Masala Sauce

Recipe Introduction
This simple vinaigrette is punctuated by the warm, spicy flavor of cinnamon, one of the main ingredients in garam masala, an Indian seasoning blend. Try the vinaigrette on grilled lamb, too.
List of Ingredients
- VINAIGRETTE:
- 2 T malt vinegar or cider vinegar
- 1 T water
- 1 T tomato paste
- 1 T garma masala
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 cup canola oil
- CHICKEN:
- 4 boneless, skinless chicken breast halves
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 1 T chopped fresh mint
Instructions
- In small bowl, whisk together all vinaigrette ingredients except oil. Slowly whisk in oil.
- Heat broiler. Spray broiler pan with nonstick cooking spray. Sprinkle chicken with 1/4 tsp salt and pepper. Place on broiler pan; broil 4 to 6 inches from heat 9 to 12 minutes or until no longer pink in center, turning once.
- Spoon vinaigrette over chicken; sprinkle with mint.
