Creamy Baked Chicken With Veggies

List of Ingredients
- 1 (3.5 lb) fresh whole chicken, cut up
- 4 medium carrots, sliced into 1/4" rounds
- 2 medium potatoes, scrubbed & cut into 1/2" cubes
- 1 cup pearl onions
- 2 stalks celery, sliced
- 1 can (10.75 oz) condensed cream of mushroom soup
- 1/2 cup 2% milk
- 1/4 cup chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp crushed dried sage
Instructions
- Preheat oven to 350 degrees.
- Heat a large nonstick skillet over medium heat; spray with cooking spray. Add chicken and cook until all sides are browned. Remove chicken to 2 to 3 quart baking dish with carrots, potatoes, pearl onions and celery.
- In small bowl combine soup, milk, chicken broth, thyme, bay leaf, salt, pepper and sage; mix well. Pour over chicken and cover.
- Bake for 1 hour, or until vegetables and chicken are tender. Discard bay leaf before serving.
