Fiery Chicken Breasts

- 2 T safflower oil
- 2 limes
- 2 tsp crushed red pepper flakes
- 1/2 tsp garlic powder
- 1/2 tsp jalapeno pepper, minced
- 2 tsp cilantro, chopped
- 2 tsp fresh basil, chopped
- 1 tsp spicy brown mustard
- 1chicken breast, halved and skinned
- salt and black pepper to taste
Instructions
- Squeeze all the juice from the limes and place in a bowl. Add the oil and mix. Next add the garlic powder, jalapeno pepper, red pepper flakes, cilantro, basil, salt, black pepper, and brown mustard. Stir until blended. Set aside.
- Wash the breasts under cold water and pat dry. Place the chicken in a baking dish and pour marinade over the breasts. Marinate in the refrigerator for at least 4 hours or over night. Turn breasts while marinating.
- Grill 6" above hot coals, turning frequently, or bake in a preheated 375 degree oven. Cook for 35-45 minutes or until the juices run clear, basting frequently.
