- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 2 Tbsp. Bertolli® Olive Oil
- 1 lb. red potatoes, sliced (such as zucchini, yellow squash, red and/or green bell peppers)
- 1/2 tsp. dried rosemary, crushed
- 1 package Knorr® Leek recipe mix
- 1-1/2 cups water
- 2 Tbsp. dry white wine or water
Instructions
- Pour yourself a glass of wine, then season the chicken with a little salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and cook chicken, turning once, until thoroughly cooked, about 8 minutes. Remove and set aside.
- Stir in vegetables and rosemary and cook, stirring occasionally, until vegetables are crisp-tender, about 4 minutes. Stir in Knorr® Leek recipe mix, water and wine and bring to a boil. Reduce heat and simmer, stirring occasionally, until vegetables are tender, about 2 minutes. Return chicken to skillet and simmer until heated through. Enjoy your beautiful creation!
