GINGER CHICKEN STIR-FRY

- 1 lb. boneless, skinless chicken breasts, cut in thin strips
- 1 package Knorr® Hot & Sour recipe mix
- 1 Tbsp. soy sauce
- 2 Tbsp. vegetable oil
- 1 clove garlic, finely chopped
- 1 tsp. grated fresh ginger
- 1-1/2 cups snow peas (about 6 oz.)
- 1 can (14 oz.) baby corn
- 1 Tbsp. firmly packed brown sugar
- 1-1/2 cups water
- 1 green onion, sliced
Instructions
- Combine chicken, 1 tablespoon Knorr® Hot & Sour recipe mix and soy sauce; set aside.
- Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes. Remove chicken and set aside.
- Heat remaining 1 tablespoon oil over medium heat and cook garlic and ginger, stirring occasionally, 30 seconds. Add snow peas and baby corn and cook, stirring frequently, until snow peas are crisp tender, about 3 minutes. Stir in brown sugar, water and remaining recipe mix. Return chicken to skillet. Cook, stirring frequently, until sauce is thickened, about 1 minute. Sprinkle with green onion and serve with hot cooked rice.
