Grilled Chicken With Gazpacho Salsa
List of Ingredients
- 1 cup diced, seeded tomatoes
- 1/2 cup diced, seeded cucumber
- 1/2 cup diced green bell pepper
- 1/4 cup finely chopped red onion
- 2 T olive oil
- 1 clove garlic, minced
- 1 T red wine vinegar
- 1 T finely chopped fresh cilantro
- 1 T finely chopped fresh mint
- 3/4 tsp salt
- 1/4 tsp ground cumin
- 1/4 tsp hot pepper sauce
- 6 boneless, skinless chicken breast halves
- salt and pepper
- Gazpacho Salsa (recipe follows)
- 2 cups coarsely chopped, seeded tomatoes (about 1 1/4 lbs)
- 2 green onions, with tops, sliced
- 1 garlic clove, minced
- 1 to 2 tsp minced, seeded jalapeno or serrano chili pepper, fresh or canned
- 1 T olive or vegetable oil
- 2 to 3 tsp lime juice
- 8 to 10 sprigs fresh cilantro, minced, (optional)
- 1/2 tsp salt or to taste
- 1/2 tsp sugar or to taste; 1/4 tsp black pepper
Instructions
- In small bowl, combine tomatoes, cucumber, bell pepper, onion, olive oil, garlic, vinegar, cilantro, mint, salt, cumin and hot pepper sauce; adjust seasonings accodring to taste.
- Season chicken with additional salt and pepper.
- Oil grid to prevent sticking. On covered grill, over medium briquets, grill chicken, 6 to 8 minutes, turning once, until cooked through.
- Top with Gazpacho Salsa. Garnish with cilantro sprigs.
Final Comments
Gazpacho Salsa:
In medium bowl, combine tomatoes, onions, garlic, jalapeno pepper, vegetable oil and lime juice. Stir in cilantro. Season with salt, sugar and black pepper. Adjust seasoning to taste, adding additional lime juice or chili peppers, if desired.
