- 2 teaspoons paprika
- 1 teaspoon hot Mexican-style chili powder
- 1 teaspoon seasoned salt
- 1/2 teaspoon brown sugar
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 1 tablespoon vegetable oil
- 4 boneless, skinless chicken-breast halves (about 5 ounces each)
Instructions
- Preheat grill to medium. Place grill rack 6 inches from heat.
- Combine paprika, chili powder, seasoned salt, brown sugar, garlic powder and cayenne pepper in a bowl and mix well.
- Add vegetable oil to paprika mixture and stir to form a paste. Rub mixture evenly over chicken. Arrange on grill rack; cover.
- Grill, turning once, until an instant-read thermometer inserted in center of meat registers 180F, about 8 to 10 minutes.

*When the weather isn't right for grilling, broil the chicken instead. Broil 4 inches from heat for 5 minutes; turn and broil another 5 minutes. Turn the broiler to low and cook, turning once, until a meat thermometer inserted in the chicken reads 180F.
*If Mexican-style chili powder isn't available, an extra teaspoon of paprika and a pinch of ground cumin will do the job.
