Herb-Infused Roasted Chicken

List of Ingredients
- 1/4 cup butter, at room temperature
- 2 T French herb roasting rub, like McCormick
- 2 T chopped fresh parsley
- 1 shallot, peeled and quartered
- 1 whole chicken (about 4 lbs)
Instructions
- Heat oven to 450 degrees. In bowl, combine butter, rub and parsley. Place shallot quarters and 1 T butter mixture in cavity of chicken. Using kitchen twine, tie chicken legs together.
- Place chicken on rack set in roasting pan. Spread remaining butter mixture over chicken. Roast 10 minutes. Reduce heat to 350 degrees.
- Roast chicken 1 hour more, or until thermometer inserted in thigh, not touching bone, reads 180 degrees, basting with pan drippings. Let sit 15 minutes before slicing.
