Herbed Roast Turkey Breast

- 1 teaspoon salt
- 1 medium onion, peeled and quartered
- 2 carrots, peeled and quartered
- 2 celery stalks, cut into chunks
- 4 sprigs parsley
- 6 tablespoons fresh chopped sage
- 1 whole bay leaf
- 2 tablespoons fresh chopped thyme
- 2 tablespoons butter, melted
- 1/4 teaspoons black pepper
- 1 -5.5 lb bone in turkey breast, cleaned and patted dry
Instructions
- Preheat oven to 325 degrees.
- Sprinkle turkey breast with 1/2-teaspoon salt. In a roasting pan, mound carrots, onion, celery, parsley, and bay leaf in the center. Gently loosen the skin from the breast; sprinkle underneath the skin with 1/2 the sage and thyme. Rearrange the skin over breast and place turkey skin side up on the mound of vegetables. Brush turkey with 2 tablespoons of butter and then sprinkle with remaining sage, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Roast turkey uncovered until meat thermometer reaches 180 degrees. This should take about 2.5 hours.
