Jamaican Jerk Chicken

- 1/2 cup white vinegar
- zest and juice of 4 limes
- 1/4 cup canola oil
- 5 scallions, trimmed and coarsely chopped
- 3 cloves garlic, coarsely chopped
- 2" piece ginger, coarsely chopped
- 2 Scotch bonnet peppers, seeded and chopped, or to taste
- 2 T ground allspice
- 2 T ground thyme
- 1 T ground cinnamon
- 1 T sugar
- 1 tsp ground black pepper
- 1 tsp salt
- 1 tsp cayenne pepper
- 3 lbs chicken, cut into 8 pieces
Instructions
- In a food processor, combine vinegar, lime zest, lime juice, canola oil, scallions, garlic, Scotch bonnet pepper, ginger, allspice, thyme, cinnamon, sugar, black pepper, salt, and cayenne pepper. Puree until smooth.
- Place chicken pieces in a medium bowl. Pour marinade over chicken, and turn the pieces to coat. Cover, and refrigerate for at least 1 hour or ovenight if possible.
- Preheat the oven to 350 degrees. Place the chicken pieces on a foil-lined baking sheet and cook until the juices run clear when pierced with a two-pronged fork, about 45 minutes.
