Lemon-Herb Chicken
List of Ingredients
- 1 (2 1/2 lb) chicken, cut up
- 2 T fresh lemon juice
- 1 1/2 tsp grated lemon rind
- 1/2 tsp salt
- 1/2 tsp cracked pepper
- 4 sprigs fresh rosemary, sage, or thyme
- Hot cooked wild rice
Instructions
- Arrange chicken in a lightly greased 13" x 9" baking dish. Drizzle with lemon juice, and sprinkle with lemon rind, salt, and pepper. Place fresh herbs over chicken.
- Bake, covered, at 375 degrees for 1 hour. Uncover and bake 15 more minutes. Serve with wild rice.
