    Lemon Poppy Seed Chicken Paillard

    List of Ingredients


    • 4 chicken breasts; halved, boned and skinned
    • 1/4 cup bottled oil and vinegar dressing
    • 2 tsp poppy seeds
    • nonstick oil spray
    • 1/4 cup lemon juice, bottled organic or fresh


    Instructions


    1. Coat the chicken pieces with 1 T of the dressing. Place them between sheets of plastic wrap and pound to an even thickness of about 1/8" thick. Sprinkle with the poppy seeds.
    2. Heat 2 large skillets until very hot. Coat with oil spray, and add the chicken, and saute until golden brown and firm, about 1 minute per side. Transfer the chicken to a serving platter.
    3. Add the remaining dressing and the lemon juice to one of the pans, bring to a boil, and pour the sauce over the chicken.
