Experiment with various flavored mustards to add a different spin to this simple glaze.
List of Ingredients
- 1/2 cup Dijon-style mustard
- 3 T vinegar
- 4 tsp Worcestershire sauce
- 1 tsp snipped fresh thyme or 1/8 tsp dried thyme, crushed
- 4 chicken legs (thigh and drumstick), or 4 drumsticks and 4 thighs (about 3 lbs total), or 4 chicken breast halves (about 2 lbs total)
- 2 T light-flavor molasses
Instructions
- For marinade, stir together mustard, vinegar, Worcestershire sauce, and thyme till smooth. Skin chicken pieces, if desired.
- Place chicken pieces in a plastic bag. Pour mariande over chicken; seal and mariante in refrigerator for 4 to 24 hours. Drain, reserving marinade. For sauce, measure 1/3 cup reserved marinade into a small saucepan; add molasses. Heat till boiling. Reduce heat and simmer for 5 minutes; cool. Transfer sauce to a container; cover and refrigerate.
- Arrange medium-hot coals around a drip pan in a grill with a cover. Test for medium heat above the drip pan. Place chicken pieces, bone sides down, on the grill rack over the drip pan.
- Cover and grill for 50 to 60 minutes or till tender and no longer pink, brushing occasionally with remaining marinade. (Do not brush during the last 5 minutes of grilling.) Reheat sauce; pass with chicken.
