List of Ingredients
- 4 individually fresh frozen boneless, skinless chicken breasts
- 2 boxes Uncle Ben's long grain & wild rice original recipe
- 3 1/4 cups water
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 cup sliced mushrooms
- 4 slices Swiss cheese
Instructions
- Remove protective ice glaze from frozen chicken by holding under cool running water 1 to 2 minutes.
- Spray large skillet with nonstick cooking spray. Add chicken; cook over medium-high heat 5 to 7 minutes or until light brown.
- Add water, rice and contents of seasoning packets. Bring to a boil. Cover; reduce heat; simmer 20 minutes.
- Stir in bell peppers; sprinkle mushrooms over chicken. Cook, covered, 5 to 8 minutes or until internal juices of chicken run clear. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 170 degrees).
- Place cheese over chicken; remove from heat. Let stand, covered, 5 minutes or until cheese is melted.
- Serve chicken while still hot with rolls and mixed vegetables, if desired.
- Refrigerate leftovers immediately.
