    Oven-Fried Picnic Chicken

    List of Ingredients


    • 1 (12 oz) can frozen lemonade concentrate, thawed, divided
    • 1 (3 to 4 lb) fryer chicken cut up
    • 1/2 cup plus 2 T flour
    • 1 1/2 tsps salt
    • 1/2 tsp pepper
    • 1 cup oil
    • 2 T butter, melted


    Instructions


    1. Refrigerate 1/4 cup lemonade concentrate for basting. Pour remaining concentrate in a large, resealable plastic bag; add chicken. Seal and turn to coat; refrigerate 4 hours, turning occasionally. Drain and discard marinade.
    2. Preheat oven to 350. In another large, resealable plastic bag, combine flour, salt and pepper. Add chicken, a few pieces at a time, and shake to coat.
    3. In large skillet, cook chicken in oil 1 1/2 to 2 minutes on each side or until golden. Place chicken on rack in shallow roasting pan. Brush with butter. Bake 50 to 55 minutes or until juices run clear, basting with lemonade every 15 minutes. Serve warm or cold.
