    • 3-1/2- to 4-lb. roasting chicken
    • 1 package Knorr® Pesto sauce mix
    • 2 Tbsp. Bertolli® Olive Oil OR 3 Tbsp. I Can't Believe It's Not Butter!® Spread, melted


    Instructions


    1. Preheat oven to 425°. Arrange chicken, breast side up, in a 13 x 9-inch baking or roasting pan.


    2. Combine Knorr® Pesto sauce mix and olive oil. Gently spread mixture under and over chicken skin.Roast chicken for 20 minutes. Reduce heat to 350° and roast for 1 hour and 15 minutes or until meat thermometer inserted in thickest part of the thigh reaches 180°.

    3. Let stand 10 minutes before slicing.
