    Recipe Introduction


    Chopped pistachios add nutty flavor and crunchy texture to boneless, skinless chicken breasts. Watch the chicken carefully as it cooks to make sure the nuts don't burn.


    List of Ingredients


    • 4 boneless skinless chicken breast halves
    • 1/2 tsp salt
    • 1/4 tsp freshly ground black pepper
    • 1/4 tsp cayenne pepper
    • 1 egg
    • 1 cup finely chopped pistachio nuts
    • 1 T olive oil


    Instructions


    1. Place chicken between 2 pieces of waxed paper or foil. With meat mallet or heavy skillet, flatten until about 1/2 inch thick.
    2. In small bowl, stir together salt, black pepper and cayenne pepper. In small shallow bowl, beat egg. Place nuts in another small shallow bowl. Sprinkle all sides of chicken with pepper mixture. Dip in egg; dip in nuts.
    3. Heat oil in large nonstick skillet oven medium-high heat until hot. Add chicken; cook 4 minutes or until browned, turning once. Cover and cook an additional 2 minutes or until no longer pink in center and juices run clear.
