    Rapid Chicken in Wine Sauce


    List of Ingredients


    • 1 lb boneless chicken breasts, skinned and cut in half
    • 1/4 cup unbleached flour (or 2 T flour and 2 T oat bran)
    • 1/4 cup mild, light flavored light olive oil
    • 1 tsp dried thyme leaves
    • 1 tsp dried rosemary leaves
    • 1/2 tsp dried oregano leaves
    • 2 cloves garlic, minced
    • 1/2 cup dry white wine
    • 1/2 cup low-salt chicken broth
    • 1/4 cup chopped fresh parsley


    Instructions


    1. Rinse chicken and dry on paper towels. Dredge chicken in flour and saute in 2 T olive oil. Cook over medium high heat for 5 minutes on the first side and 3 minutes on the second side. Reduce heat and add remaining 2 T olive oil to skillet with thyme, rosemary, oregano, and garlic. Stir to distribute herbs evenly. Add wine and chicken broth to skillet and bring to simmer.
    2. Cover and simmer over low heat for 10 minutes. Serve garnished with parsley.


    Final Comments


    Serve with steamed broccoli and brown rice.
    Serves 4.
