Rapid Chicken in Wine Sauce
List of Ingredients
- 1 lb boneless chicken breasts, skinned and cut in half
- 1/4 cup unbleached flour (or 2 T flour and 2 T oat bran)
- 1/4 cup mild, light flavored light olive oil
- 1 tsp dried thyme leaves
- 1 tsp dried rosemary leaves
- 1/2 tsp dried oregano leaves
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup low-salt chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- Rinse chicken and dry on paper towels. Dredge chicken in flour and saute in 2 T olive oil. Cook over medium high heat for 5 minutes on the first side and 3 minutes on the second side. Reduce heat and add remaining 2 T olive oil to skillet with thyme, rosemary, oregano, and garlic. Stir to distribute herbs evenly. Add wine and chicken broth to skillet and bring to simmer.
- Cover and simmer over low heat for 10 minutes. Serve garnished with parsley.
Final Comments
Serve with steamed broccoli and brown rice.
