    Roast chicken with Asian flavors

    List of Ingredients


    • 3/4 cup hoisin sauce
    • 3/4 cup Chinese rice wine (Shaoxing wine)
    • 1/3 cup soy sauce
    • 2 tablespoons grated fresh ginger
    • 2 tablespoons fresh lime juice
    • 2 tablespoons packed brown sugar
    • 1 teaspoon minced fresh mint
    • 1 tablespoon Asian sesame oil
    • 1 1/2 teaspoons Chinese five-spice powder
    • One 3- to 4-pound chicken, cut into 8 pieces


    Instructions


    1. Combine all ingredients except chicken in large bowl. Stir well. Add chicken pieces and coat well with marinade. Let stand at room temperature 30 minutes.

    2. Preheat oven to 450 degrees. Place chicken in baking dish, skin side up. Transfer marinade to small saucepan, bring to boil over medium heat, and cook 5 minutes. Bake chicken, basting occasionally with marinade, until chicken is opaque throughout.
