Turkey Filets w/ Fresh Black Bean Salsa

- PAM® for Grilling Spray
- 1 can (15 ounces) black beans
- 1 can (11 ounces) Mexican-style corn, drained
- 1 cup chopped tomato
- 2 tablespoons sliced green onions
- 2 tablespoons chopped fresh cilantro
- 2 cloves garlic, minced
- 4 teaspoons lime juice
- 4 teaspoons olive oil
- 1 tablespoon Mexican seasoning blend
- 1 teaspoon salt
- 1 pound Butterball® Fresh Turkey Breast Filets
Instructions
- Prepare grill for medium direct heat cooking. Lightly coat unheated grill rack with cooking spray.
- In a large bowl, combine black beans, corn, tomatoes, green onions, cilantro and garlic in large bowl. Pour lime juice and olive oil into bowl; stir to blend. Refrigerate until time of serving.
- Combine seasoning blend and 1 teaspoon salt. Sprinkle both sides of filets with seasoning mixture.
- Cook filets 5 to 7 minutes per side or until meat is no longer pink, turning two to three times for even cooking and browning. Serve with black bean salsa.
