    Serve with corn tortillas heated directly on the grill, roll and place alongside for a quick bread!


    List of Ingredients


    • PAM® for Grilling Spray
    • 1 can (15 ounces) black beans
    • 1 can (11 ounces) Mexican-style corn, drained
    • 1 cup chopped tomato
    • 2 tablespoons sliced green onions
    • 2 tablespoons chopped fresh cilantro
    • 2 cloves garlic, minced
    • 4 teaspoons lime juice
    • 4 teaspoons olive oil
    • 1 tablespoon Mexican seasoning blend
    • 1 teaspoon salt
    • 1 pound Butterball® Fresh Turkey Breast Filets


    Instructions


    1. Prepare grill for medium direct heat cooking. Lightly coat unheated grill rack with cooking spray.
    2. In a large bowl, combine black beans, corn, tomatoes, green onions, cilantro and garlic in large bowl. Pour lime juice and olive oil into bowl; stir to blend. Refrigerate until time of serving.
    3. Combine seasoning blend and 1 teaspoon salt. Sprinkle both sides of filets with seasoning mixture.
    4. Cook filets 5 to 7 minutes per side or until meat is no longer pink, turning two to three times for even cooking and browning. Serve with black bean salsa.
