Amish Cookies

List of Ingredients
- 1 cup butter, softened
- 1 cup confectioners' sugar
- 1 cup vegetable oil
- 2 large eggs, lightly beaten
- 4 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cream of tartar
- 1 tsp vanilla extract
- Finely chopped walnuts, melted chocolate, and confectioners' sugar (optional)
Instructions
- In a large bowl, combine butter, confectioners' sugar, and vegetable oil. Beat with an electric mixer at medium speed, until creamy.
- Add eggs and beat well.
- In a medium bowl, combine flour, baking soda, and cream of tartar.
- Gradually add to butter mixture, beating well. Beat in vanilla. Cover and chill 1 hour.
- Preheat oven to 375. Lightly grease baking sheets.
- Drop dough by tablespoonfuls on prepared baking sheet. Gently flatten with a fork. Sprinkle walnuts on top of cookies, if desired. Bake 10 minutes.
- As cookies cool, drizzle with melted chocolate and sprinkle with confectioners' sugar, if desired.
