Au Gratin Carrots

List of Ingredients
- 2 T butter
- 4 1/2 cups thinly sliced carrots (about 1 1/2 lbs)
- 2 T minced green onion
- 2 T all-purpose flour
- 1 T chopped fresh parsley
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 cup milk
- 1 cup shredded Colby-Monterey Jack cheese blend
- 1 cup crushed potato chips
Instructions
- Preheat oven to 350. Lightly grease a 9-inch baking dish.
- In a large skillet, melt butter over medium heat. Add carrots and green onion; cook 6 minutes, stirring occasionally.
- Stir in flour, parsley, salt, and pepper; cook 2 minutes, stirring occasionally. Add milk, cook 2 to 3 minutes, or until thickened. Stir in cheese.
- Spoon mixture into prepared baking dish; top with chips. Bake 30 minutes, or until hot and bubbly.
