Caramelized Onion and Steak Sandwiches

List of Ingredients
- 3 T butter
- 4 large sweet onions, thinly sliced
- 1 (1 1/2 lb) cooked flank steak (leftover from Grilled Flank Steaks)
- 2 T soy sauce
- 1/2 tsp ground black pepper
- 1/4 tsp salt
- 6 hoagie rolls, split, buttered, and toasted
- 3 cups shredded Monterey Jack cheese with horseradish (Swiss cheese can be substituted)
- Chopped fresh parsley (optional)
Instructions
- In a large skillet, melt butter over medium heat. Add onions, cover, and cook, 30 minutes, stirring occasionally. Uncover, increase heat to medium-high, and cook 5 to 6 minutes, stirring frequently, or until onions are caramelized. Thinly slice steak diagonally against the grain. Add steak, soy sauce, pepper, and salt, stirring to combine. Cook 3 to 4 minutes, or until heated through.
- Divide onion mixture evenly between hoagie rolls. Top each with 1/2 cup cheese. Broil sandwiches 5 1/2-inches from heat until cheese is melted. Garnish with chopped fresh parsley, if desired.
