Cardamon Rice

List of Ingredients
- 3 cups (24 oz) chicken broth or water
- 3/4 tsp salt
- 4 whole cardamon pods
- 2 whole cloves
- 1 cinnamon stick
- 1 1/2 cups uncooked long-grain rice
- 1/2 cup thinly sliced dried apricots
- 1/2 cup thinly sliced dried figs
- 1/4 cup chopped parsley
Instructions
- In a medium saucepan, bring broth or water and salt to a boil over high heat. Stir in cardamon, cloves, cinnamon, and rice and reduce heat to low. Cover and simmer until rice is tender and water is absorbed, about 20 minutes.
- Remove spices, fluff rice with a fork, and stir in apricots, figs, and parsley. Serve with African Chicken in Peanut Sauce.
