List of Ingredients
- 2 cups Soft Jasmine Rice, rinsed
- 2 (14 oz) cans chicken broth
- 2 Tbsp virgin olive oil
- 1 large onion, chopped
- 2 cinnamon sticks
- 12 cardamon seeds, break the pods to get the tiny seeds
- 5 cloves
- 1 tsp ground turmeric
- 1 bay leaf
Instructions
- In a medium saucepan, heat the chicken broth to a boil.
- In a large saucepan or Dutch oven, heat oil over medium heat. Add onion and sauté until almost soft.
- Add cinnamon, cardamon seeds, cloves, turmeric and bay leaf. Sauté 2 - 3 minutes to release the flavor of the spices.
- Add rice. Sauté 2 - 3 minutes until well coated with spices and oil.
- Add chicken broth. Bring back to a boil.
- Reduce heat and simmer with a tight fitting lid for 15 - 20 minutes or until all the liquid is absorbed. Let sit for 5 minutes. Fluff with a fork and serve.
