PORCINI MUSHROOM AND ONION RISOTTO

List of Ingredients
- ½ oz sliced dried porcini mushrooms, soaked in hot water about 45 min.
- 4oz fresh mushrooms, chopped
- 4 cups chicken broth
- ¼ cup butter
- 2 onions, chopped
- 1 clove garlic, crushed
- 1 ½ cups Arborio rice
- 1/3 cup grated parmesan cheese
- ¼ cup chopped parsley
Instructions
- In a saucepan melt butter over low heat. Cook onion and garlic in butter, add Arborio rice into the pan.
- Pour one cup chicken broth over rice; cook until broth is absorbed and add another cup of chicken broth until is absorbed one more time.
- Add porcini mushrooms and fresh mushrooms to rice mixture, continue adding stock, 1 cup at a time.
- Once all the broth has been added and absorbed, reduce heat. Stir in parmesan cheese and parsley, cook for 2 minutes and serve immediately.
