Bacon-Ranch Potato Salad

- 2 pounds red potatoes, quartered
- Oil
- Salt to taste
- Pepper to taste
- 1 cup chopped, cooked smoked bacon
- 1 cup diced red onion
- 1/4 cup freshly chopped parsley
- 1 cup ranch dressing
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, lightly coat potatoes with oil. Season with salt and pepper. Spread evenly on a large sheet pan. Bake for 25 to 35 minutes until tender; cool.
- Combine bacon, onion, parsley and ranch dressing; toss with potatoes. Season with additional salt and pepper. Keep refrigerated.
