Beef 'n Bean Taco Salad

- 2 tablespoons olive oil
- 1 large red onion, diced
- 2 garlic cloves, minced
- 1 1/2 pounds ground beef sirloin
- 1 can (15 ounces) red kidney beans, drained and rinsed
- 1 1/2 tablespoons chili powder
- 1 tablespoon tomato paste
- 1 1/2 teaspoons salt
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1 large head romaine lettuce, shredded
- 1 cup shredded Monterey Jack cheese
- 5 plum tomatoes, diced
- 1/2 cup sour cream
Instructions
- In a large skillet, heat the oil over medium heat. Add the onion and cook, stirring, until soft, about 4 minutes. Add the garlic and cook until fragrant, about 2 minutes.
- Add the meat and cook, breaking it up with a spoon, until it's no longer pink. Add the beans, chili powder, tomato paste, salt, oregano and pepper. Cook, stirring occasionally, until the flavors are blended, about 5 minutes.
- To serve, arrange the shredded lettuce on a large platter. Spoon the warm meat mixture into the center of the platter and sprinkle the cheese and then the tomatoes evenly on top. Dollop with sour cream. Serve the salad right away.
